A crocheted horse was one of the first toys that I ever made from yarn for my daughter. She now has two real Arabian horses but still treasures her herd of crocheted ponies.
Horse-related crochet patterns were hard for me to find back then. Now, they are everywhere on the net, if you have the money. BUT! Look what I’ve found:

Mary Maxin has a filet crochet horse head pattern. Unfortunately, it is only sold in the kit to make it. Wish there was a way to talk to ya, even though its so many years later LOL

Thank you so much, Kristina. Your interest piqued mine and I went searching! I did find an image on Pinterest of a crocheted corner-to-corner blanket with a horse head in the middle. You can see it here: https://www.pinterest.ca/pin/338684834471490305/
Although there isn’t a pattern, the author explains how she made it in the comments, essentially following a standard corner to corner pattern, but following a graph of her own to create the horse head,
